Try these hydrating & nutritious meals for scorching days.
When temperatures soar, the last thing anyone wants to do is stand over a hot stove. The mere thought of turning on the oven can send shivers of dread down your spine, and not the good kind. But eating well during a heatwave doesn't have to mean sacrificing flavour or nutrition. In fact, the hottest days call for the coolest meals: dishes that are refreshing, packed with hydrating ingredients, and require absolutely no cooking whatsoever.
The secret to staying energised when the mercury rises lies in choosing water-rich fruits and vegetables, think cucumbers, tomatoes, melons, and leafy greens, while balancing them with protein and fibre to keep you full and stabilise your blood sugar. Heavy, stodgy meals only add to the lethargy that heat brings, so light, vibrant, and nutrient-dense dishes are the way forward.

Classic Chilled Gazpacho
This Andalusian staple is the ultimate summer soup. It's gloriously simple, requires only a blender, and tastes better the longer it sits in the fridge.
Ingredients:
6 ripe tomatoes, roughly chopped
1 cucumber, peeled and chopped
1 red pepper, deseeded and chopped
½ small red onion
1 garlic clove, crushed
3 tbsp extra virgin olive oil
2 tbsp sherry vinegar (or red wine vinegar)
200ml cold water
Salt and pepper to taste
Method:Place all ingredients in a blender and blitz until completely smooth, adjusting the water to achieve your preferred consistency. Season generously. Chill in the fridge for at least two hours—overnight is even better—to allow the flavours to meld. Serve in chilled bowls with a drizzle of olive oil and perhaps a few croutons or chopped herbs on top.

High-Protein, High-Fibre No-Cook Salad
This salad is a meal in itself. Packed with chickpeas and quinoa for protein (around 15g per serving).
Ingredients:
1 tin chickpeas, drained and rinsed
200g cooked quinoa (use ready-to-eat pouches for true no-cook ease)
1 large cucumber, diced
2 large tomatoes, diced
1 red pepper, finely chopped
100g feta cheese, crumbled (or a plant-based alternative)
3 tbsp pumpkin seeds
Zest and juice of 1 lemon
3 tbsp extra virgin olive oil
Handful of fresh parsley, chopped
Salt, pepper, and a pinch of chilli flakes
Method:Combine chickpeas, quinoa, cucumber, tomatoes, and red pepper in a large bowl. In a separate small bowl, whisk together the lemon juice, zest, olive oil, parsley, and seasonings. Pour the dressing over the salad, toss well, and finally scatter with feta and pumpkin seeds. This can be eaten immediately but is even better after resting for twenty minutes to allow the flavours to develop
