Unusual BBQ marinades to take your BBQ to the next level!


A great barbecue isn’t just about the meat, it’s about bold, exciting flavours. While classic marinades like garlic and herb or smoky BBQ sauce are delicious, why not surprise your guests with something different? Here are three unusual yet delicious marinade ideas to elevate your grilling game.

1. Coffee & Maple Glaze

Coffee adds a deep, rich flavour that pairs perfectly with smoky grilled meats. This marinade works wonders on ribs, pork chops, or even chicken.


Ingredients:

120ml strong brewed coffee

60ml maple syrup

2 tbsp balsamic vinegar

1 tbsp smoked paprika

2 crushed garlic cloves

1 tsp salt


Method: Mix all ingredients in a bowl, then coat your meat and marinate for at least 4 hours (or overnight for maximum flavour). Grill as usual, brushing with extra glaze for a sticky finish.


2. Miso & Honey Marinade

Miso brings an umami punch that enhances the natural sweetness of honey. Ideal for salmon, chicken thighs, or aubergine.


Ingredients:

3 tbsp white miso paste

2 tbsp runny honey

1 tbsp soy sauce

1 tbsp rice vinegar

1 tsp grated ginger

1 tsp sesame oil


Method:  Whisk all ingredients together and marinate your chosen protein or veg for 2-3 hours before grilling. The miso caramelises beautifully for a sweet-savoury crust.


3. Pineapple & Chilli Marinade

Pineapple contains enzymes that tenderise meat while adding a tropical sweetness, balanced by spicy chilli. Perfect for prawns, pork, or halloumi.


Ingredients:

100ml pineapple juice (or blended pineapple)

1 red chilli, finely chopped

2 tbsp olive oil

1 tbsp lime juice

1 tsp ground cumin

½ tsp salt


Method:  Combine all ingredients and marinate for 1-2 hours (longer for meats, shorter for seafood). Grill until slightly charred for a sweet, spicy, tangy finish.


Top Tips:

• Always pat meat dry before grilling for better searing.

• Reserve some marinade not used for marinating for basting (don’t reuse any marinade used on raw raw meat or fish).

• Experiment with marinating times, fish and seafood need less time than red meat.
